Spicy Moroccan Tomato-Ginger Soup

Hot, bored, and tired of the same dull lunches? My chilled and spicy Moroccan soup is just what you need to add pizazz and allure to your day. It’s also packed with some of the healthiest, Acid-Kicking foods and spices. 

I’d double this recipe as it keeps well in the fridge and makes for the perfect no-prep meal. 

Ingredients: (Serves 4)

  • 3 tomatoes
  • 1/4 cup sun-dried tomatoes
  • 4 ounces fresh ginger, minced
  • 1⁄2 cup tahini
  • 1 teaspoon ground cardamom
  • 1 teaspoon ground cumin
  • 1⁄2 teaspoon caraway seeds
  • 2 garlic cloves
  • 1/4 cup chopped fresh basil
  • 1/4 chopped fresh parsley
  • 1/4 cup extra-virgin olive oil
  • 1 teaspoon salt (Celtic Grey, Himalayan pink, or Redmond Real Salt)
  • Fresh basil, paprika, or cayenne pepper for garnish

Directions:

  1. Place all the ingredients (except for the garnish) in a blender and blend to your desired consistency.
  2. Garnish with basil, paprika, or cayenne.
  3. Serve chilled.
