Recipe: Coconut Chia Seed Pudding

Chia seeds are slow-burning fuel that energizes you all day, strengthens your gut, revs up your metabolism, and gives you the power to take on the day—and kick acid!

Ingredients

4 1⁄2 teaspoons chia seeds
1⁄2 cup unsweetened coconut milk
1⁄2 teaspoon of stevia, coconut nectar, or ChocZero Maple Syrup (1g Net Carbs)
Pinch ground cinnamon
Pinch sea salt
Toasted coconut flakes for garnish

Directions

Place chia seeds in a medium bowl.

Whisk coconut milk, maple syrup (or stevia or coconut nectar), cinnamon, and salt together in a medium bowl.

Pour over chia seeds and stir well.

Allow mixture to soak until thickened. This should take 30 minutes, or you can put it in an air-tight container overnight for an already-made breakfast.
