Alkaline Diet Recipe: Avocado Kale Salad

   

In my last post, I told you why magnesium is the missing mineral for more energy, better health, and overall, just feeling awesome.

Well today, I’ve got a recipe for you that is a mega-dose of magnesium. It has 3 magnesium-rich foods – kale, avocado, and pumpkin seeds. So this one recipe should deliver approximately 100% of your recommended daily value.

Just think of how much natural energy this is going to give you! Plus, it’s delicious! It makes a nice, simple dinner or a perfect lunch.

AVOCADO KALE SALAD

INGREDIENTS [Serves 2]

2 large bunches of kale

2 tbsp. coconut oil

3 tsp. coconut aminos (preferred), Braggs Liquid Aminos, or gluten-free tamari

3 organic Haas avocados, chopped

1/4 cup pumpkin seeds

DIRECTIONS

Wash and chop kale.

Melt coconut oil in a large pan over medium-high heat. Add kale and stir fry for 5 minutes. The kale should be tender and bright green. When the kale is done cooking, toss with the aminos or tamari. Serve with avocado and pumpkin seeds on top.
