Superpower Alkaline Treats

All those protein and granola bars found in the “health foods” aisle at the grocery store may have MORE CALORIES AND SUGAR THAN A CANDY BAR! Yep, check the labels. You will also find a mile-long ingredient list of words that are hard to pronounce. If you can’t pronounce it—don’t eat it.  

So when you are going the extra mile on your next bike ride or hike (or just dreaming about it from your office desk), pop in one of these good-for-you granola balls to boost your energy. 

They have good fats, plant-based proteins, plenty of fiber, and a touch of sweetness, all balled up into easy on-the-go snacks.


Ingredients: (makes 24 servings)

  • 1 cup of raw almond butter
  • 6 dates, pitted
  • ¼ cup of flaxseeds
  • 1 tablespoon of ground cinnamon
  • ¼ cup of cacao nibs
  • 2 teaspoons of pure vanilla extract
  • ¼ cup plus 1 tablespoon of chia seeds
  • Unsweetened coconut flakes

Directions:

  1. In a food processor, pulse together the almond butter and dates.
  2. Add the flaxseeds, cacao nibs, cinnamon, vanilla, and 1/4 cup of the chia seeds and continue to pulse.
  3. Roll into 1-inch balls.
  4. Combine the coconut flakes and remaining tablespoon of chia seeds on a plate and roll the balls in the mixture to coat.

They store for up to a week in an airtight container, so double up—you will be glad you did!
