Summer Cucumber Salad

This summer side salad could not be simpler or more tasty—and it’s ready in a literal minute. 

And this salad tastes even better after a few days of marinating in the fridge. Chop and chomp, and then save the rest for later. 

Ingredients: (1 salad)

  • 1 English cucumber, sliced thinly 
  • 1 lemon (freshly juiced)
  • 1 tbsp. extra virgin olive oil
  • Black or traditional sesame seeds
  • Sea salt (Celtic Grey, Himalayan, or Redmond Real Salt) and black pepper to taste

Directions:

  1. Mix all the ingredients in a bowl and enjoy.
