  Today’s recipe is not for days when you’re doing the 7-Day Alkaline Cleanse. Depending on where you are in your alkaline journey and how often you eat grains, it might not even be for most days.

But what it’s fantastic for is FEAST DAYS! I’m going to tell you more about feast days in my blog post on Thursday, so look out for that, but until then, feast days are like cheat days without all of the acid and junk food! 

Recipes like this tasty breakfast are perfect for feast days. They are still packed with vitamins, minerals, and healthy fats, but they also allow you to expand what you enjoy to include foods like gluten-free oats and dates that I try to limit the rest of the time.

If you want to limit sugar, which is always a good idea, you can swap a drop or two of organic liquid stevia for the dates. It will still taste plenty sweet and will not change the texture at all.

OVERNIGHT PUMPKIN CHIA OATS

Ingredients [Serves 4]

3 cups gluten-free rolled oats

(I use Bob’s Red Mill)

1/2 cup organic canned pumpkin puree

3 cups almond or coconut milk, unsweetened

3 pitted dates

1/2 cup chia seeds

1/4 cup unsweetened shredded coconut flakes

1/4 cup raw almonds, chopped

1/2 tbsp. cinnamon

1/4 tsp. nutmeg

Optional: 1/4 tsp. allspice

Directions

Place almond milk in a blender with 3 dates and blend. Next, add the almond milk mixture to a large mixing bowl with rest of the ingredients and thoroughly mix. Add more almond milk to obtain desired consistency, but realize the chia will thicken and gel the mixture overnight.

Place the bowl in the refrigerator overnight and enjoy the next morning, either cold or warmed up. Kept covered in the fridge, the leftovers will last up to 5 days.
