Low-Carb Cinnamon Apples

Ingredients (serves 2)

  • 2 organic Granny Smith apples, cored and chopped
  • 2 tablespoons filtered water
  • 1 tablespoon coconut oil
  • 1⁄2 teaspoon ground cinnamon
  • Pinch of sea salt (Celtic Grey, Himalayan pink, or Redmond Real Salt)
  • 1/4 teaspoon pure vanilla extract

Directions

  1. Placed the chopped apples in a small saucepan along with the water.
  2. Cover and cook over medium heat, stirring occasionally.
  3. After 5 minutes or so, the apples will become slightly soft, and the water will be fully absorbed.
  4. Add the coconut oil and stir it into the chopped apples.
  5. Cook for another 5 minutes, stirring every minute or so. Add the cinnamon, sea salt, and vanilla. Stir well.
  6. Cook for another few minutes, stirring until the apples reach your desired firmness and consistency.
