Avocado Wraps

With all the heavy holiday foods, add this light snack filled with scrumptious healthy fats, proteins, minerals, and vitamins. Even better, my avocado wraps can be created in a minute. A true gift during this hectic time.

Eating for optimal health can be quick, simple, and delicious. You honestly won’t want to go back to grabbing a processed snack in a box ever again. I can already hear the appreciation and applause from your brain, mood, skin, hair, heart, metabolism, and every other part of your body.

Ingredients: (Serves 2)

  • 2 romaine lettuce leaves
  • 1 Hass avocado, peeled, pitted, and diced
  • (Optional) Smashed adzuki beans. I use Eden Organics for more protein and added delicious flavor
  • 4 large fresh cilantro leaves, chopped
  • 1 tablespoon red onion, diced
  • Handful of sprouts or microgreens
  • 1 tablespoon freshly squeezed lime juice
  • Sprinkle on Pure Himalayan Pink Salt and freshly ground black pepper
  • Drizzle on 1 tbsp. of omega-3 oil (avocado oil, extra virgin olive oil, black seed oil, or  macadamia nut oil)

Directions:

  • Set out each romaine leaf as you would a rice paper roll or a piece of sandwich bread.
  • Smear half of the avocado into the romaine leaves and add a spoonful of smashed adzuki beans (if using).
  • Top off the rest of the diced avocado, cilantro, onion, and sprouts or microgreens.
  • Drizzle the lime juice and omega-3 oils on top, and season to taste with sea salt and pepper.
  • Roll the leaves to form a wrap or burrito shape, and enjoy right away.
