Spinach & Strawberry Salad With Basil Dressing Recipe

This salad is versatile too. Toss in other veggies you’ve got in your fridge, substitute chickpeas for the white beans or another nut for the pine nuts, or use another fresh herb out of your garden instead of basil.

SPINACH & STRAWBERRY SALAD WITH BASIL DRESSING

Ingredients [Serves 2]

4 cups baby spinach

1 cup chopped strawberries

1 cucumber, diced

1 Hass avocado, diced

1/2 cup white beans, drained and rinsed well (I use Eden Organics)

1/4 cup pine nuts or sliced almonds

 

Dressing Ingredients

3 tbsp. apple cider vinegar

1/2 cup extra virgin olive oil

2 cloves garlic, minced

2 tbsp. basil, chopped

1 tbsp. mint (optional), chopped Sea salt to taste (Celtic Grey, Himalayan, or Redmond Real Salt)Black pepper to tast.

Directions

Combine salad ingredients in a serving bowl. Whisk all dressing ingredients together and dress your salad. Serve and enjoy!
