Cucumber Gazpacho Recipe

Last time, I shared the 7 foods you probably think are healthy that in truth, are not doing your body any favors. But just because you should avoid foods like wheat bread and peanut butter does not mean you can’t enjoy nutritious alternatives.

 

Recipes like this one are the perfect antidote. They’ve got plenty of chlorophyll from the celery, cucumber, basil, and herbs, plus healthy fat from avocado to unstick the acid in the fat cells that have plagued you for so long.

 

And I can’t neglect to tell you, it’s delicious too! This makes a perfect dinner for hot summer nights when you don’t want to stand over a stove.

CUCUMBER GAZPACHO

Cilantro

Ingredients [Serves 2]

2 medium sized cucumbers
1 Hass avocado
1 handful fresh basil (or spinach)
1/2 cup filtered water
1 tbsp. extra virgin olive oil
1/2 tbsp. lime juice, fresh squeezed
1 celery stalk
Optional: Jalapeno (to desired spice)
Sea salt (Celtic Grey, Himalayan, Redmond Real Salt) and black pepper to taste

Garnish (all optional):

1 tbsp. chia seeds
1 tbsp. cold-pressed pumpkin, olive, or coconut oil
1 tbsp. fresh chopped herbs (i.e. dill, basil, cilantro, tarragon, etc.)
Handful of sprouts (i.e. alfalfa, broccoli)

DIRECTIONS: Blend soup ingredients together in a high speed blender. Chill for a couple hours (or eat right away), garnish and enjoy!
