Busy Night Recipe: Adzuki Butter Tacos

This recipe will be your new go-to for the nights you do not have time to cook but still want to give your family an actual meal.

My Adzuki Butter Tacos taste amazing, provide protein, fiber, and healthy fats, and take a minute to make.

It’s truly busy night magic!

Ingredients: (Base portions off your family size)

  • Can of adzuki beans (I use Eden Organics)
  • Organic avocados 
  • Butter Lettuce
  • Himalayan pink salt
  • Ground Cumin
  • Hemp seeds
  • Red onion
  • Optional: hot sauce. Make your own with my recipe.

Directions:

  1. Drain and rinse adzuki beans. Optional: cook in a pan for a minute or so if you want them warm.
  2. Put a couple of tablespoons of the beans and a few slices of avocado in a butter lettuce leaf for your healthy taco.
  3. Sprinkle a little ground cumin, some hemp seeds, red onion, and a little salsa or hot sauce if you like things spicy!
  4. Always feel free to get creative with any of my recipes, add new spices or maybe a slice of bell pepper to your taco.
