Kid-Approved Coconut Pops

Most store-bought popsicles contain artificial dyes, toxic sweeteners, and tap water—a recipe for DISASTER. My Coconut Pops are a refreshing treat that actually give your body, mind, and soul that blissful summer feeling. 

Making them can be a fun and creative family activity. Experiment with fresh blueberries, strawberries, or whatever you find at your farmer’s market. 

Ingredients: (Makes 6 pops)

  • 1/2 cup unsweetened shredded coconut
  • 1/2 cup coconut water
  • 1 can coconut milk (Native Forest)
  • 2 Tsp. vanilla (or 4-5 drops of Medicine Secret Vanilla)
  • 4-5 dates (or 2-3 drops of organic stevia)
  • Pinch of Himalayan Pink Salt (or Celtic Grey Sea Salt)

Directions:

  • Blend all ingredients together.
  • Pour into Popsicle molds and freeze overnight.
  • Enjoy sweet summer memories.

Speaking of summer sunshine, I want to throw some shade on the MYTH that you do NOT need to take Vitamin D during the summer. 

Unless you are in direct sun for endless hours (which would be dangerous), you still need your daily dose of Acid-Kicking Vitamin D3+K2 for optimal health.
